1 garlic bulb
½ lemon
Small bunch of fresh thyme
2 bay leaves
2 tablespoons of olive oil
Salt
Freshly ground black pepper

Clean the turkey before staring and pat dry with a paper towel. Place the garlic, lemon, thyme and bay leaves inside the cavity of the turkey and rub the skin with the olive oil. Season the skin and cavity well with salt and freshly ground black pepper
Set temperature to 428°F on the halogen oven and put the turkey onto the low wire rack.
Cook for one hour. Check the bird and see if it needs to be turned over to cook the underside better.
Turn the temperature down to 338°F and cook for a further 30 to 45 minutes or until the juices run clear when you insert a skewer into the base of the breast.
When cooked, remove the turkey from the halogen oven and place on a warm plate. Cover the turkey in tin foil and leave to rest for 10 to 15 minutes.
